Mussels are generally sold in mesh bags and pretty much alive. The mesh bags allow them to breathe. Make sure the mussels you purchase are alive and not sitting in liquid. They should smell of nothing but the sea air: briny and fresh , and not off-putting or "fishy" in any way. 

Avoid those that look dried out. A dull shell is an indication that the mussels might have died. You'll also want to ensure that the shells are tightly closed or those that snap shut when tapped and not chipped, as these are further indications of freshness. But some may "gape" open slightly. Try pressing the shell shut. If it stays closed, the mussel is still alive and safe to eat, but if it opens again, indicates that the creature is already dead and make sure to throw the mussel away.  

They should still have the beard attached. Don't buy mussels that are too clean! If the 'beard has already been removed the mussels won't keep as long. The byssus is physically attached to the mussel meat, if this is pulled off too soon before cooking it can shock the mussel and reduce its shelf life. Store the mussels as they are, leave the cleaning until a few hours before cooking.

Bring mussels home from the market by placing them in an open-topped bag that can breathe. Tightly tying them up in a plastic bag without air circulation will spoil them.

Don’t buy frozen mussels. They usually come pre-shelled, have added coloring to make them a coral-ish pink, and have the texture of an inner tube. The delicate flavor and pleasantly chewy texture we love in freshly-steamed mussels are nowhere to be found. The same goes for the shrink-wrapped mussels on the half-shell.


TIPS-HOW TO STORE MUSSELS?

It’s ideal to cook mussels the day you buy them, but you can refrigerate them for up to a couple of days.

If not cooking right away, remove the mussels from their mesh bag and place them in a colander. Place the colander inside of a bowl to collect juices and cover loosely with a damp paper towel and store in the refrigerator. Change or re-dampen the paper towel and discard any liquid at the bottom of the bowl daily. Refrigerate for up to three days. Remember that the mussels are live and need to breathe, so do not place them in air-tight plastic bags. Do not store them submerged in water or they might die. 

Do not soak mussels in water or clean them until ready to cook.

Before you clean mussels, give mussels a sniff. They should still smell fresh and salty, like the ocean, after storage.

 

PREPARING MUSSELS BEFORE COOKING

Tips-How To Clean And Debeard Mussels?

There is no need to worry about food hygiene issues as long as the guidelines below for preparing mussels are closely followed.            

The majority of mussels you'll find available today are usually farm-raised, which is good news when it comes to cleaning them. Wild mussels can be full of sand and debris; farm-raised mussels arrive pretty clean. Still, you'll want to give them a rinse.

Place the mussels in a colander in the sink and run water over them, using your hands or a clean scrubbing brush to rub off any debris like seaweed, sand, barnacles, or mud spots that could be on the shell, so it doesn't end up in your dish. 

Mussels can contain varying amounts of sand and grit in them. I like to soak the cleaned mussels in cold salt water for 15-20 minutes before cooking to release this debris. As they breathe, they will push salt water and sand out of their shells, which makes the cleaning process easier for you. I use 1/4 cup kosher salt to every 3 cups of water.

If you find any mussels with open shells, lightly tap that mussel against the side of the sink. If the mussel closes up again in response to this turmoil, it's alive. If you tap a mussel and it does not close it’s shell, set it aside. It may just be slow to react. If you check back in a few minutes and it is still open, discard, as it is most likely dead. Discard any mussels with cracked or broken shells , or whose shells remain open.

Take note that prepare them the same day as you plan to cook as removing the byssus reduces shelf life and it shocks them. You may notice a fibrous brown string or looks like hair coming out from the side of the mussel, this is the beard (byssus thread) of the mussel and it’s inedible. The "beard" of a mussel is the clump of hair-like fibers that sprouts from the shell. Often farm-raised mussels will come debearded, but even so you'll want to check that there aren't some pesky ones hanging on. To remove the beard from the mussels, grab it with your thumb and forefinger and tug it toward the hinge of the mussel shell. Sometimes when your hands are wet, you find it hard to grasp the beard. So you use a small piece of paper towel to yank it out. You can also use a knife to gently scrape away the beard.

Rinse with tap water and drain the mussels.

Once your mussels are cleaned, they're ready to cook and eat. 


COOKING MUSSELS

Mussels don’t require a long cooking time, just 6-8 minutes, or less, in most cases. If you were to cook with more mussels, increase cooking time by a few more minutes.  

Once cooked, the shells should open up slightly — this indicates that the shellfish was alive when cooked — any mussels that stay closed during cooking should be discarded as it is not safe to eat. Likewise, this indicates that while the shells were closed, the mussels were not alive initially.

Whatever recipe or method you choose, it’s important not to overcook the mussels so that the texture don’t become rubbery and chewy.

INSTRUCTIONS

On Scallion Prep.
Cut the scallion into thin rings and separate the green and white sections. The white section is used as aromatic, while the green part is for garnishing the dish. The finished dish will be sweeter. 

Prepare Ingredients For Sauté / Stir-Fry.
1 tablespoons extra virgin olive oil
▢2 stalks white section of the scallions
▢3 chilies, deseeded, finely sliced 
▢3 garlic cloves, minced
▢3 thin slices ginger, minced
▢2 shallots finely chopped
  • In a stockpot with a lid, heat the oil over medium heat. (do not use a nonstick pan, the mussels will damage the coating)
  • Add the white section of the scallions, chilies, shallots, ginger; and the garlic, sauté a minute until fragrant. 


Prepare Ingredients For Simmer                                                     ▢500grams of clean mussels in shells 
▢1/4 cup water
▢1/4 cup Chinese Shao Xing cooking wine, can substitute a dry sherry or mirin (Japanese sweet rice wine)
▢2 stalks green section of the scallions

  • Add cleaned mussels, Shaoxing wine, and water. 
  • Increase the heat to medium-high and cover the pot, bring everything to a boil for 2 minutes. 
  • After 2 minutes, reduce the heat to medium-low, remove the lid and stir to coat mussels evenly. 
  • Halfway through cooking, add scallions, stir the mussels so that those on top gets to the bottom of the pot to ensure uniform cooking. Cover with lid and simmer for another 3-4 minutes, until the mussels open.
  • Remove from the heat and discard any shells that remain closed. 
  • Transfer the remaining mussels to a large serving bowl with a slotted spoon.
  • Pour the broth over your mussels.
  • Garnish with parsley and serve with rice or crusty bread.

A-Prepare A Sauce For The Mussels
▢3 chilies, deseeded, finely sliced 
▢3 garlic cloves, minced
▢3 thin slices ginger, minced
▢2 shallots, minced
▢2 tablespoon Chinese Shao Xing cooking wine, can substitute a dry sherry or mirin (Japanese sweet rice wine) 
▢2 tablespoon dark soy sauce
▢1 tablespoon light soy sauce
▢1/4 teaspoon ground white pepper 
▢2 stalks scallions, finely shredded 

B-Prepare For Steaming The Mussels
▢500grams of clean mussels in shells
▢5 thin slices ginger, shredded 
▢3 tablespoon Chinese Shao Xing cooking wine, can substitute a dry sherry or mirin (Japanese sweet rice wine)  (If you like a strong wine taste, you can increase the amount of Wine)

C-Heating The Oil
▢3 tablespoons extra virgin olive oil

D-To Garnish
▢1 handful of parsley roughly chopped to garnish 

 INSTRUCTIONS

Prepare the sauce. Combine all the sauce ingredients (A) in a ceramic bowl or heat proof bowl. Mix all the ingredients above together in a sauce bowl and set aside.

Set up a steamer or put a rack into a wok or deep pan and fill it with 5cm/2in of water. Bring the water to the boil over a high heat.

(B) Place the mussels on a plate that will fit into the steamer with the ginger either on top or bottom of the mussels. When water is boiled  then place the plate into the steamer or onto the rack. Be careful of the hot steam.

Steam the mussels for 7 minutes on low heat so that the water is barely simmering and cover with lid. 3 minutes before removing from the steamer, drizzle with the (B) Chinese wine, then cover the lid and continue steaming until the mussels begin to open.

The steamer needs to remain covered to ensure sufficient heat wave will circulate within the steamer to cook the mussels evenly throughout until they open up, thereby making the mussels to soak up all the flavors.

(C) Meanwhile, heat up a non-stick small frying pan over high heat. When hot, add the oil. Heat the oil until it's very hot and slightly smoking. Remove from the stove and pour the hot oil into the sauce bowl which you prepared earlier, stir and mix well. Set aside.

Once the mussels are cooked, remove from the steamer. Discard any mussels that remain closed. Stir the sauce and pour over your mussels. (D) Garnish with parsley and serve warm.

▢3 red big tomatoes, deseeded (see note)
▢5 chilies, deseeded, finely sliced (more spicy, add more)
▢4 cloves garlic, chopped
▢7 slices galangal
▢1 medium red onion finely chopped
▢3 stalks lemongrass. thinly sliced
▢5 kaffir lime leaves, torn into chunks, center rib removed
▢1 cups basil leaves 
▢3 tablespoons extra virgin olive oil 
▢1 tablespoon fish sauce / light soy sauce 
▢1 cups chicken / pork stock (add 1 more cup if need more soup)
▢2 lime- divided-1 lime zest and 1 1/2 lime juice for paste, 1/2 reserve for garnish or add fresh tartness to broth 
▢250ml low-fat unsweetened coconut milk 
▢1 handful of parsley roughly chopped - divided 1/2 for paste and 1/2 to garnish 
▢1/2 teaspoon Himalayan Pink Salt season to taste (optional)


INSTRUCTIONS

Prep On Tomatoes.
Cut the tomatoes and remove the seeds, strain off and use the flavorful gel that surrounds them and put aside. Make sure you do not squash the tomatoes while cutting it (use a sharp knife) because the flavor is in the juice. Preserve the juice as much as you can.

Be sure to remove the stems of the tomatoes. It doesn’t taste good in the mussels soup. Then cut the tomatoes into small dices or into small wedges and set aside.


Prep The Cooking Paste In Advance.
Prepare the cooking paste ahead of time and leave it in the fridge until you are ready to cook the next day.

Ingredients: A
▢5 chilies, deseeded, finely sliced (more spicy, add more)
▢5 cloves garlic, chopped
▢7 slices galangal
▢1 medium red onion finely chopped
▢3 stalks lemongrass. thinly sliced
▢zest from 1 lime
▢1/2 handful of parsley roughly chopped
▢1 tablespoon fish sauce / light soy sauce
▢3 tablespoons extra virgin olive oil

In a food processor, combine the above ingredients A and blend until the mixture turns into a paste. 

Ingredients: B
▢1 1/2 lime juice for paste
▢250ml low-fat unsweetened coconut milk 

Pour the paste into a medium bowl and whisk in Ingredients and set aside.

Cooking The Mussels

Ingredients: C
▢1 cups chicken / pork stock (add 1 more cup if need more soup)

In a pot large enough to hold the mussels, add the stock (ingredients C), cover the pot with lid and bring the stock to a boil over high heat.
 
Ingredients: D
▢cooking paste-prepared earlier
▢5 kaffir lime leaves, torn into chunks, center rib removed
▢500grams of clean mussels in shells
▢3 red big tomatoes, deseeded + flavorful gel (see note)-prepared earlier

Once the soup heats up, add ingredients D. Immediately cover the pot  and simmer the mussels on medium-low heat until all of them are open, about 7 minutes. The pot needs to remain covered to ensure sufficient heat wave will circulate within the pot to cook the mussels evenly throughout until they open up, thereby making the mussels to soak up all the flavors. 3 minutes before removing from the stove, stir the mussels half way through so that those on top gets to the bottom of the pot to ensure uniform cooking and better heat distribution, especially if you're cooking a large pot of mussels. Cover the lid to continuously simmer the mussels until all of them are open, Check the mussels. If they are not open, cook for an additional 1-2 minutes. Discard the unopened ones.

Ingredients: E
▢1 cups basil leaves
▢1/2 handful of parsley to garnish 

Once the mussels are cooked, turn off the heat and add ingredients E Close the lid for 20-30 seconds to let the residual heat warm up and distribute the aroma of the the fresh basil and parsley.

Ingredients: F
▢1/2 lime reserve for garnish or add fresh tartness to broth 

You can serve it as it is or add the lime juice for some added fresh tartness. 

Ingredients: G ( optional )
▢1/2 teaspoon Himalayan Pink Salt season to taste (optional)

Give the broth a taste and adjust seasoning as needed only. 

As a general reminder, you don’t really need to add salt because sea mussels are naturally salty on their own so you want to make sure the soup does not end up too salty.

That’s it. Your hot and spicy mussels soup are ready to be served at this point. Spoon the mussels and broth into serving bowls and serve with  rice or crusty bread. Enjoy!
